Recipes from the Road: Sausage, Egg, and Cheese Breakfast Roll-Ups

You'll only need only a few simple ingredients for a tasty grab-and-go breakfast that will be ready in no time. Simply bake breakfast sausage, eggs, and cheddar cheese and you'll have the perfect roll-up to start your day. A savory breakfast wrap that’s perfect for an easy make-ahead meal!

Ingredients:

8 large eggs

1/4 cup milk

Salt and pepper to taste

1 tablespoon butter

8 breakfast sausage links, cooked

8 slices cheddar cheese

8 large flour tortillas


Directions:

In a bowl, whisk together the eggs, milk, salt, and pepper.

Heat the butter in a large skillet over medium heat. Pour in the egg mixture and scramble until the eggs are just set.

Lay out the flour tortillas on a clean surface. Place a slice of cheddar cheese in the center of each tortilla.

Divide the scrambled eggs evenly among the tortillas, placing them on top of the cheese.

Place a cooked sausage link on top of the eggs.

Roll up the tortillas tightly around the filling, folding in the ends to enclose the ingredients.

Heat a non-stick skillet over medium heat. Place the roll-ups seam-side down in the skillet, pressing gently to seal the seam. Cook until golden brown and crispy, about 2-3 minutes per side.

Serve hot, with salsa or hot sauce if desired.
